This dessert is delightful! It was another recipe that my Gran sent me. It actually reminds me of a dessert that my Gran use to make when I was a child, but I am sure the one she use to make was full of sugar! This recipe has no sugar, wheat or diary and it is as equally as delicious as the childhood dessert that I remember.
INGREDIENTS
1/2 cup dried chopped dates
Water
3/4 coconut milk
2 eggs
1 lemon (juice)
2/3 desiccated coconut
Pinch of salt
Separate the eggs carefully put the yolks aside. Whip the eggs whites with an electric beater until peaks and put aside.
Place the dates in a small bowl and cover with boiling water for five minutes. When the dates have softened, mash the dates into a smoothish paste. In a small pot on the stove top, beat together the coconut milk, egg yolks and lemon juice squeezed from the lemon. Heat on the stove top and stir until warm.
Add 2/3 of a cup of desiccated coconut, pinch of salt and the mashed dates to the mixture. Slowly heat the mixture until it starts to thicken. Once the mixture has thickened take it off the heat. Fold the mixture and the egg whites together.
Serve warm or cooled in little dessert dishes with some fresh berries, almond flakes or shredded coconut.
This looks like a super easy recipe for Holiday parties! But what could we call it so people aren’t turned off by its healthiness? Lol
Hi Steph! Thanks for stopping by. It is a great dessert for parties, you could also serve it in a large bowl if you were taking to to someones place. Just call it a ‘creamy delight’ that will put them off the scent that it is healthy! My husband really enjoyed it and usually he is the first to be put off simply because he knows it is all natural ingredients.
