This is a simple & quick chocolate pudding that everyone will absolutely love. The raspberries give the dish a beautiful boost, cutting through the rich chocolate flavors. You will love it! This recipe will make four ramekins, if you have more or less then adjust the recipe accordingly.
INGREDIENTS
1/2 cup almond or coconut milk
1/4 cup coconut flour
3 tablespoons cacao
4 tablespoons honey or natural maple syrup
3 eggs
2 tablespoons of coconut oil
1 cup frozen raspberries
DIRECTIONS
- Pre-heat the oven at 180/350 degrees
- Place the frozen raspberries out on the bench to defrost
- Place all the ingredients in the food processor & whiz until combined (or whisk by hand)
- Have the ramekins ready on a baking tray & pour the mixture evenly into the dishes
- Place in the oven for 10 minutes
- In a small bowl mix the raspberries so that they break up a bit
- When you have pulled the puddings out of the oven, top with a heaped spoon of mushed raspberries
- Enjoy!
