Rich Chocolate Pudding with Raspberry Smash

Chocolate puddingThis is a simple & quick chocolate pudding that everyone will absolutely love. The raspberries give the dish a beautiful boost, cutting through the rich chocolate flavors. You will love it! This recipe will make four ramekins, if you have more or less then adjust the recipe accordingly.

INGREDIENTS

1/2 cup almond or coconut milk
1/4 cup coconut flour
3 tablespoons cacao
4 tablespoons honey or natural maple syrup
3 eggs
2 tablespoons of coconut oil
1 cup frozen raspberries

DIRECTIONS

  1. Pre-heat the oven at 180/350 degrees
  2. Place the frozen raspberries out on the bench to defrost
  3. Place all the ingredients in the food processor & whiz until combined (or whisk by hand)
  4. Have the ramekins ready on a baking tray & pour the mixture evenly into the dishes
  5. Place in the oven for 10 minutes
  6. In a small bowl mix the raspberries so that they break up a bit
  7. When you have pulled the puddings out of the oven, top with a heaped spoon of mushed raspberries
  8. Enjoy!
