Lemon & Garlic Roasted Chicken Breast

Lemon & Garlic ChickenAs you know all of my recipes are simple to prepare because like you probably are, I am busy!  But I still love my food to have bold and amazing flavours, life is too short to eat boring meals! This chicken dish is no exception! It is an easy week night dinner, literally bung it in the oven and wait 30 minutes, plus it will please the whole family. This recipe will serve a family of four, if you have more or less people you can easily adjust it to suit.

INGREDIENTS

4 small chicken breast or if large use 2 cut in half length wise
2 lemons
8 cloves of garlic
6 sprigs of fresh thyme
3 tablespoons of olive oil
1 teaspoon sea salt

DIRECTIONS

  1. Turn the oven on to 180/350 degrees & line a baking tray with a sheet of baking paper
  2. Place the chicken breast on the tray closely but not touching, you want them to roast rather than stew
  3. Peel the garlic cloves & rub the cloves over the chicken for flavour, then place around the chicken
  4. Cut the lemons into quarters, squeezing a few of the quarters over the chicken, then placing all the lemon quarters around the chicken
  5. Pluck some of the leaves of the thyme off the sprigs & sprinkle over chicken, then place the sprigs around the chicken
  6. Drizzle the olive oil over the chicken & sprinkle the sea salt over the chicken
  7. Place in the oven for approximately 30 minutes or until cooked, this will depend on the size of your chicken
  8. Serve with a wedge of lovely roasted lemon & freshly steamed vegetables
