This is to die for! I am very excited about this one. If you made this for friends they would be amazed to learn that this recipe is sugar, gluten and dairy free.
Ingredients
1 cup dried dates
1 cup cashew nuts
1 cup coconut
1 table spoon of cacao powder
1 table spoon of coconut oil
1 1/2 cup of fresh or frozen berries
3/4 cup or coconut yogurt
In the food processor place the dates, cashew nuts, coconut and cacao powder. Whizz together until the mixture is fine. Add the coconut oil and whizz for a further 30 seconds. You will see the the mixture is a little more damp and will form a ball easily.
Press the mixture in a slice dish or a pie dish (lined with baking paper), which ever you prefer. Maybe a pie dish is nice for dessert, where as a slice dish is great for a afternoon tea. Place the base in the fridge for a few hours prior to serving so that it has time to set.
To make the berry coulis, put the berries in a pan or a pot and reduce down on the stove top until the mixture becomes syrupy, this will take longer if berries are frozen. Place the berry coulis in the fridge to cool. Assemble the dish just prior to serving. Spread the coconut yogurt onto the base and then top with the berry coulis.
This is great as a afternoon tea or a yummy dessert. Serve to impress!
