Bircher Breakfast

I love eggs for breakfast and lets face it eggs are the best food in the world, but sometimes it is nice to have a change. Bircher is such a yummy treat for breakfast so I have come up with this is a grain, gluten, sugar and dairy free option.


1/4 cup almonds
1/4 cup walnuts
1/4 cup chai seeds
1/4 cup dried apricots
1 apple
squeeze of lemon
2 table spoons of coconut yogurt (or you could use coconut milk or cream)

Put the almonds, walnuts and chai seeds in the food processor. Process until the nuts look as they do in the photo below. Or you may enjoy them chopped finer.
Bircher Nuts
Grate the apple and finely slice the dried apricots. Squeeze 1/2 a lemon on the grated apple to prevent the apple from going brown. Mix all the ingredients together and leave to soak in the refrigerator over night. Serve with a serve of strawberries.

    • Hi Jess. I know, I am excited about my breakfast in the morning! You could mix it up with whatever ingredients you have such as different nuts, dried fruit or raw fruit. If you are not dairy free you could also use natural yogurt.
