When you are a real foodie, breakfasts are easy… eggs, eggs & eggs. Well that is OK for people like me who think eggs are the most amazing food on the planet, but not everyone does. If it is the case that eggs don’t float your boat, then real food breakfasts can be tricky because most Western breakfasts include sugary cereals or breads, which are not suitable for a real foodie. So here is a different healthy breakfast idea that will keep you full for hours. Porridge is so yummy & just feels so good, like a hug for your tummy!
This recipe serves two.
INGREDIENTS
2 tablespoons of chia seeds
1 tablespoon of linseeds
1 tablespoon of sunflower seeds
1 tablespoon of pepita
5 small dates – finely chopped
1 cup of almond milk – home-made is the best, click here for recipe
1/2 cup pureed pumpkin
1/2 teaspoon of vanilla
1/2 teaspoon of cinnamon
1/2 teaspoon of nutmeg
DIRECTIONS
- Place all of the seed in a mortar & pestle & grind down so that the seeds are broken up
- On the stove on a medium heat place all of the ingredients in a pot
- Mix together & continue to stir while on medium heat
- Keep on medium heat for approximately 5 minutes until the porridge thickens
- Serve hot with a drizzle of honey if you would like it a touch sweeter
