This chicken stir-fry dish is a weekly staple in our house, it is bright, crunchy, tasty & quick to make. Fast week night dishes are very important to me, because I work full time & have a young family…. making me, like you, stretched for time.
The reason that I wanted to post this dish is to show you that you do not need to buy pre-packaged, stir-in or just add jars of sauces to make a beautiful, quick, stir-fry. When our parents were young those quick fix jars didn’t even exist, nowadays there is an entire isle full of processed sauce options that claim to make your life better.
I believe that these sauces are very cleverly marketed & we all get sucked into buying them. The reality is, they are full of additives, trans fats & processed baddies. You will also save a lot of money if you do not buy them, they are expensive!
You only need a handful of fresh ingredients to make a beautiful stir-fry for your family. This recipe will serve 4 people & it is very simple to adjust the serving size if you need to.
INGREDIENTS
3 chicken breasts
3 garlic cloves
1 tablespoon coconut/olive oil
2 carrots
1 capsicum
2 zucchini
1 chilli (optional)
1 1/2 tablespoon honey
3 tablespoons of fish sauce
1 lime
Sesame seeds to sprinkle
DIRECTIONS
- Thinly slice the chicken breast & put aside
- Crush the garlic & put aside
- Cut the ends off the carrots, capsicum & zucchini. Peel the carrots then cut the veggies in half lengthwise & then continue to slice lengthwise & put aside
- If you are including chilli, slice the chilli finely & put aside
- Heat a wok over a medium to high heat. Add the oil, then the garlic & chicken
- Stir-fry the chicken until it is nearly cooked (do not over cook otherwise it will be dry)
- Add the vegetables & continue to stir-fry for a few minutes
- Add the honey & fish sauce, continue to stir-fry until the vegetables have softened but still have a bit of crunch
- Squeeze half a lime over the stir-fry & serve in four bowls with chop sticks
- Sprinkle with sesame seeds & serve with a slice of lime
You can vary this recipe in so many wonderful ways, this is simply a good base to start with. Here are some further ideas to change it up:
- Add handful of cashew nuts towards the end
- Add handful of basil leaves towards the end
- Add a splash of coconut aminos
- Top with a fried egg
- Use different vegetables
- Slice the vegetables in a different way
- At the end add some bean sprouts
- Use prawns instead of chicken
- Add a handful of coriander
- Add some fresh ginger
- Add dry chilli
- Top with fresh spring onion
