Cauliflower Mash
Cauliflower mash is the best, guilt free, side dish ever! You can enjoy cauliflower mash in the same way that you would mashed potato & you can even trick your kids, they have no idea! My nine year old thought that didn’t quite taste like mashed potato & he questioned me about it, but he still accepted that it was mashed potato. (I may have told a little white lie!) Now that we have been eating cauliflower mash more often the kids have forgotten what mashed potato tastes like & they enjoy the cauliflower mash in the same way.

INGREDIENTS

1/2 cauliflower
2 tablespoons butter or ghee
Salt & pepper to taste

DIRECTIONS

  1. Wash the cauliflower and cut the florets off the stalk
  2. On the stove boil a pot of water with a steam pot on top
  3. Steam the cauliflower for 15 minutes or until soft
  4. Place the cooked cauliflower in the food processor with the butter, salt & pepper
  5. Whizz on high until light & fluffy
  6. Serve & enjoy in the same way you would mashed potato
