Oh my… these are the best pancakes ever & they are gluten, grain, sugar & dairy free to boot! They are the perfect weekend treat & such a simple dish that will please the entire family. I served these to my husband as breakfast in bed (aren’t I nice?!) He came down stairs & said ‘they were yummy, you can’t tell me that they were healthy?!’ Let’s just say he is not 100% on board my real food pledge! I reported with glee that they actually are pretty healthy for pancakes.
INGREDIENTS
2 banana’s (the riper they are the sweeter your pancakes will be)
4 eggs
1/4 coconut flour
2 tablespoons of ghee, butter or coconut oil
1 teaspoon baking powder
Sprinkle of cinnamon
Pinch of salt
DIRECTIONS
- Place all the ingredients in the food processor & whizz on high until the ingredients are blended & smooth
- On the stove top, heat a pan on medium & coat the pan with a dollop of coconut oil
- Pour in the batter to make a round pancake
- Carefully flip the pancake once the edges start to look cooked
- Serve with fresh fruit & natural maple syrup
- Enjoy!

Yes that is correct. That is all you need.
Being new to Paleo, is there anything you can swap the Coconut flour for? It’s quite difficult to get hold of in the UK.
Almond flour but the quantities are different as coconut flour absorbs a lot of moisture. Maybe look at getting a packet from a online store. It will last you a long time because you don’t use much at all.

Yes they are a little hard to flip but once they get going & the pan warms it seems fine. They are not quite as robust when flipping as traditional pancakes.

These are great! I use a very similar recipe, but I can’t stand coconut flour, so I use arrow root starch instead, and vanilla as someone else suggested gives it a very nice flavor đ
If using almond flour, how much?
Awww that is a tough question without me trying it out first. Coconut flour is very absorbent so you don’t need much compared to other flours. Also almond flour is not as fluffy as coconut so you might get a denser pancake. I would start with 1/2 cup and see what the mixture is like and add more if needed. It is worth trying out but I can’t tell you for sure what the result will be. Let me know how you go. đ
