This Sweet Potato & Leek Soup is so simple & the perfect for a quick weekend lunch or dinner.
INGREDIENTS
3 sweet potato
1 leek
1 onion
1 garlic clove
1 sprig of fresh parsley
1 splash of extra virgin olive oil
Salt & pepper to taste
DIRECTIONS
- Peel the sweet potato, cut into chunks & place in a pot with boiling water on a medium heat for approx 10 minutes
- Place a steamer & lid on top of the pot to cook the leeks
- Slice the leek, place in the steamer & leave there until the sweet potato is cooked
- Dice the onion & garlic. In a pan splash some olive oil & on a medium heat sauté the onion & garlic until the onion is transparent
- Once the sweet potato is cooked place it in the food processor
- Add the sautéd onions & steamed leeks. Crack some salt & pepper to the mix for flavour
- Whizz in the food processor until smooth (this could take 3 – 5 minutes)
- Add boiling water to the soup in the food processor & keep whizzing until the soup is at the consistency that you prefer
- Once the soup is smooth transfer back to a large pot & place on a low heat
- Season to taste
- Once heated, serve with a drizzle of olive oil & freshly chopped parsley
