Banana Chocolate Cake
I learnt this recipe at Tania Hubbard’s gluten free, grain free workshop that I went to during the week, you can click here to read more about the workshop. This cake is grain, gluten, sugar & dairy free, plus it is super easy to make. Tania shared with us the secret to using coconut flour in baking muffins or cakes & she explained that is is quite different to normal flour because it soaks up a lot of liquid.

You can use the exact same formula for any cake or muffin recipe that you want to make and just change the flavour, which is what I have done with this cake. The secret is 1/2 cup of coconut flour to 6 eggs & 1/2 cup of water. The sweetener in this version is dates and banana, but you could use sultana’s, honey or natural maple syrup or you can add bacon, cheese or vegetables to make a savoury type muffin. 1 1/2 cup dried dates (soaked in 1/2 cup hot water for 10 minutes)
1/2 cup coconut flour
1/2 teaspoon bicarb soda
1 teaspoon creme of tartar
3 tablespoon cacao powder
1 very ripe banana
6 eggs
3 tablespoons coconut oil


  1. Heat the oven at 180 degrees
  2. Line a cake tin with baking paper
  3. In the food processor, place the coconut flour, soaked dates & water
  4. Give it a good whizz until it is smooth
  5. Add the banana, bicarb soda, creme of tartar & cacao
  6. Whizz again until combined
  7. Add the oil & eggs and whizz until combined
  8. You may have to give it a further stir by hand to ensure everything is evenly combined
  9. Pour into the lined cake tin
  10. Bake for 30 – 35 minutes or until the cake springs back when pressed in the middle.
