Ice-cream you scream, we all scream for ice-cream!!! Now that I have committed to quitting processed food and eating REAL FOOD I have discovered there are not too many options for ice-cream treats. This is such an easy treat idea that tastes amazing. In Australia we are coming into mango season so I was very excited to buy my first mangos of the season the other day. This recipe needs to be served and eaten straight away, it will serve the entire family.
INGREDIENTS
2 cups of cubed frozen mango
1 can of coconut milk
1 – 2 table spoons of honey (depending how sweet you want the ice-cream to be)
You need a food processor to make this ice-cream. In the food processor place the frozen mango cubes and the coconut milk. Whizz on high for a few minutes. Continue to whizz until it looks like soft serve ice-cream. Taste the mixture, if you would like it to be sweeter add 1 tablespoon of honey. Whizz again until the honey is mixed through. If you would like it sweeter add more honey.
Serve topped with fresh mango slices or coconut flakes.

I just made banana ice cream by putting a frozen banana in a food processor and added a tsp of cocoa powder and then re-froze. I need to blog it, it was good! Could be banana pudding without re-freezing!
wow! so easy, will try this with strawberries (there’s no season of mango here in Pakistan) 🙂
It would defiantly work with frozen berries too. You can buy mango in a can but just check if there is anything added if you are that way inclined.
