This is the most delicious dessert or just serve for a simple quick snack or breakfast. It it quite ice creamy, making it very ‘treat like’, however there is so much goodness packed in there. Chia seeds are amazing, if you want to know their benefits click here (Chia Seed Pudding).
INGREDIENTS
1 can unsweetened coconut milk
1 cup frozen berries
1 handful of fresh mint leaves
1 handful of chia seeds
1 tablespoon of honey – more or less depending on how sweet you want it
Simply put all the ingredients in a blender or food processor and blend together on high until completely blended. The mixture will be light and fluffy. If you serve it as a dessert, place in pretty glasses with tall spoons and top with fresh mint and blueberries. Or if you serve for breakfast, place in a tall glass with a straw. Either way …Enjoy!

I wouldn’t either, my husband did though & then I caught him eating a cookie! Lets just say he is not quite there yet.

A very processed out of the packet type. It was a a pink tic toc! They aren’t even nice compared to my beautiful real food smoothy! I will get him converted one day.
