Chicken Egg Foo Yong

This is such an easy dinner to make, it is wholesome and delicious.
Egg Foo Yong

Ingredients

1 carrot
1 onion
1 zucchini
1/2 red capsicum
1 chicken breast
1 clove garlic
Fresh basil
2 tablespoons of coconut amino
1 tablespoon of fish sauce
Coconut oil
Eggs – 1 per person

Chop the chicken into fine strips and put in the heated pan with the coconut oil to stir fry. Thinly slice the onion, carrot, zucchini & capsicum. Add the vegetables along and the minced garlic to the pan. Stir fry until the chicken is cooked.

Add the coconut amino, fish sauce and 10 basil leaves to the stir fry for taste. Set the stir fry aside. In a small bowl whisk one egg. Heat a separate clean pan with coconut oil, add the egg to the pan to make a very thin omelette.
