As I have said previously, my Gran has taken a real food pledge as well. She is really enjoying her new lifestyle and not only that but she reported to me that she has been shedding weight, without even trying. Gran supplied me with this recipe that she made up herself. She loves a treat. When she emailed me she said ‘when I make this I feel like I am cheating!’ This treat is made only from unprocessed, real food ingredients so it is not cheating just good for you, old fashioned real food.
INGREDIENTS
1 cup of dates
1/4 cup hot water
1.5 cup of shredded coconut
1 cup of dried apple
1/4 cup chia seeds
1/4 cup sunflower seeds
1/2 cup walnuts
1/2 cup coconut oil
Pour the hot water over the dates and let them soak and soften for 5 minutes. While you are waiting for the dates to soften, blend together in the food processor the walnuts, coconut, chia seeds, sunflower seeds and dried apple.
Add the soften dates and blend for a few short bursts. Scrap the ingredients into a bowl and add the coconut oil and mix through.
If the mixture looks a little wet then you can add extra coconut if needed. Press the mixture into a mini muffin tin pan. The mixture will make 24 servings.
Put in the fridge to set for about an hour before serving.
