Sweet Zinger Meatballs

These meatballs are delicious! My family loves a meatball dish and I love hiding all sorts of unidentifiable food that my kids won’t otherwise eat in my meatballs! Theses meatballs are sweet and zingy, how zingy totally depends on how much chilli you want to add.  This recipe makes enough for a meal for our family of 2 adults and 3 children.

INGREDIENTS
1 medium carrot
2 small apple’s
Dash of grated fresh ginger
I cup of shredded coconut
2 table spoons of coconut amino
500g of ground beef mince
1 lightly beaten egg
Chilli flakes to taste
Pinch of salt
Coconut oil for cooking the meatballs

Grate the carrot, ginger and 2 apples. Mix together in a bowl and add a cup of shredded coconut.

Add the mince, coconut amino, chilli and pinch of salt to the mixture. Beat the egg and add to the mixture and beat with a fork until completely combined. Now you are ready to start rolling the mixture into meat balls. You can use a teaspoon so that they are all the same size or you can be adhoc as I am and guestimate the size of the meatballs (I am not much of a measuring type).

Heat the pan with the coconut oil, when the pan is hot place the meat balls in in the pan. Don’t over crowd the pan to much as it becomes hard to turn the meatballs and the pan may loose some heat. You may have to cook a couple of batches.

Gently turn the meat balls individually in the pan until they are brown and cooked through. You will be able to see that they are cooked because the apple will start to caramelise in the pan and they will look and smell delishimo! Serve with your favourite dipping sauce and a side of steamed vegetables or on a bed of cauliflower mash.
